Bison Cuts
Slow-cooking cuts from our grass-fed Colorado bison, sized between three and four pounds each. Both the rump and boneless chuck are well-suited for Dutch ovens, slow cookers, and braising in a covered pan with liquid and aromatics. Plan on three to four hours of low-temperature cooking for tender, flavorful results. Naturally leaner than beef, these cuts benefit from moist cooking methods to retain their texture.
