Bison Cuts
Traditional cuts from our grass-fed Colorado bison, valued for their flavor and nutritional content. Bison liver is one of the most nutrient-dense foods available, naturally high in iron, vitamin A, and B vitamins, and works well sliced thin and pan-seared or blended into ground bison. Bison tongue is best slow-braised for three to four hours until tender, then peeled and sliced thin for tacos, sandwiches, or cold preparations. Sourced from animals raised on open grassland with no hormones, antibiotics, or grain.
