The filet mignon, cut from the tenderloin, is the most tender cut you can pull from a bison. Lean, mild in flavor, with a texture that almost cuts itself. Where a ribeye has bold flavor to lean on, a filet asks the cook to step back and let the meat speak. From a 100% grass-fed, grass-finished animal, the flavor is clean and slightly sweet — leaner than beef tenderloin but with a character of its own.

Each package contains 2 filets, cut 1 inch thick. Individual filets may vary slightly in size — the listed package weight is what's guaranteed. Classic for an anniversary dinner, surf-and-turf, or steak medallions over a rich sauce. Pairs beautifully with peppercorn cream, blue cheese butter, or a red wine reduction. Bacon-wrapping is a classic move that adds welcome fat to this lean cut.

A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat earlier than they would beef and letting it rest. Treat it gently and it will reward you.

A note on weight: The package size you select is your guaranteed minimum. Many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.

Shipping

Orders ship every Monday via UPS to ensure your meat arrives fresh and frozen during the work week. Orders placed by Sunday at midnight will ship the following Monday. Orders placed after that will ship the next Monday. On some occasions we will ship on Tuesdays.

How We Pack Your Order

Every order ships frozen in an insulated cooler with a thermal liner and food-safe dry ice. Our packaging is designed to keep your meat fully frozen throughout the transit window, even with minor shipping delays.
