Product & Quality
Our bison stay on pasture until two days before processing when we place them in our corals to be readied for transport to our processor. In those two days we ensure they are under no stress with plenty of food and water.
We raise our bison as close to how they lived when they used to roam the eastern plains. We never grain finish them instead we let them roam our pasture from the day they are born till we send them off for processing.
We do not give our bison any hormones or antibiotics.
Bison meat is healthier than beef as it is a learner red meat that offers higher protein, fewer calories, and lower fat and cholesterol.
Our meat is processed at a USDA certified facility, vacuum sealed, and labeled for every cut. You get the quality and peace of mind that comes with professional handling.
Cooking & Storage
Properly vacuum sealed bison will keep in the freezer for up to 12 months without any loss of quality. For best flavor and texture we recommend consuming within 6-9 months.
The best method is to transfer your bison from the freezer to the refrigerator 24-48 hours before you plan to cook it. For faster thawing, place the vacuum sealed package in a bowl of cold water and change the water every 30 minutes. Never thaw bison on the counter at room temperature.
We do not recommend refreezing bison once it has been fully thawed as this can affect the texture and quality of the meat. If you thawed more than you need, cook it all and refrigerate or freeze the cooked leftovers instead.
Because bison is leaner than beef it cooks approximately 30% faster at the same temperature. Using lower heat and shorter cooking times is the key to great bison. High heat for too long will dry it out quickly so keep a close eye on it and use a meat thermometer.
Overcooking is the most common reason bison turns out tough or dry. Bison has very little fat compared to beef which means it has less margin for error when cooking. Always use a meat thermometer, cook to medium-rare or medium, and let the meat rest before cutting. If your bison was tough it almost certainly needed less time on the heat, not more.
