100% grass-fed and grass-finished ground bison from one herd on our ranch in Deer Trail, Colorado. Ground buffalo, if that is what you grew up calling it. Vacuum-sealed in exact 1 lb packs and frozen the day it was ground, so what you take out of the freezer is what went into it. No weight surprises.

What it is like to cook with

This is the workhorse of the store. Bison is a lot leaner than ground beef and a little higher in protein, and it has a deeper, slightly sweet flavor that comes from a lifetime on Colorado grass. Use it anywhere you would use ground beef: tacos, chili, meatballs, lasagna, sloppy joes, weeknight burgers, breakfast hash, stuffed peppers, shepherd's pie. It just works.

A note on cooking grass-fed bison

Because it is so lean it cooks faster than beef and dries out if you are not paying attention. A splash of olive oil or tallow in the pan helps, and moderate heat beats high heat. Cook ground bison to 160°F inside, the same as any ground meat.

Orders ship every Monday via UPS to ensure your meat arrives fresh and frozen during the work week. Orders placed by Sunday at midnight will ship the following Monday. Orders placed after that will ship the next Monday. On some occasions we will ship on Tuesdays.

Every order ships frozen in an insulated cooler with a thermal liner and food-safe dry ice. Our packaging is designed to keep your meat fully frozen throughout the transit window, even with minor shipping delays.

Every cut we ship carries the name of our ranch with it, and we take that seriously. If your order arrives with any issues or doesn't meet your expectations, contact us and we'll make it right.
