Brisket is a smoker's dream and a low-and-slow legend. Tough when raw, transcendent when cooked properly — hours over indirect heat or in a slow oven turn it into pull-apart tender meat with bark you'll want to fight over. Each package is a portion-sized brisket cut from our grass-fed Colorado bison, ideal for a small gathering or weekend cook.

Classic served sliced with white bread, pickles, and onions Texas-style. Also makes outstanding burnt ends, brisket tacos, brisket chili, or pulled brisket sandwiches with coleslaw. Leftovers are arguably better than the first day.

A note on cooking grass-fed bison: Grass-fed bison brisket is significantly leaner than the beef brisket most pitmasters are used to. Without the fat reserves of a beef brisket, this cut can move from underdone to overdone faster than expected. Watch your internal temperature closely, wrap in butcher paper when the bark sets, and don't over-render.

A note on weight: The package size you select is your guaranteed minimum. Many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.

Orders ship every Monday via UPS to ensure your meat arrives fresh and frozen during the work week. Orders placed by Sunday at midnight will ship the following Monday. Orders placed after that will ship the next Monday. On some occasions we will ship on Tuesdays.

Every order ships frozen in an insulated cooler with a thermal liner and food-safe dry ice. Our packaging is designed to keep your meat fully frozen throughout the transit window, even with minor shipping delays.

Every cut we ship carries the name of our ranch with it, and we take that seriously. If your order arrives with any issues or doesn't meet your expectations, contact us and we'll make it right.
