The New York strip is the steakhouse steak. Bolder in flavor than a filet, leaner than its grain-finished beef counterpart, with a clean fat edge that crisps up nicely over high heat. Grass-fed bison strip has a slightly sweet, earthy character that most people don't realize they're missing until they taste it side-by-side with a feedlot steak.

Each package contains 2 New York strip steaks, cut 1 inch thick. Individual steaks may vary slightly in size — the listed package weight is what's guaranteed. Excellent as a classic grilled steak, sliced over a wedge salad, or as the centerpiece of a steakhouse-style dinner at home.

A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat earlier than they would beef and letting it rest before cutting. Treat it gently and it will reward you.

A note on weight: The package size you select is your guaranteed minimum. Many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.
