The ribeye is the cut that built a thousand steakhouse menus. Pulled from the rib primal, it is tender, rich, and full of the deep, slightly sweet flavor that is a hallmark of grass-fed bison. Don't expect the heavy marbling you'd see in a grain-finished beef ribeye — our bison is 100% grass-fed and grass-finished, which means less fat and a cleaner, more honest flavor. What you taste here comes from moisture and a lifetime on Colorado grass, not from intramuscular fat.

Each package contains 2 ribeye steaks, cut 1 inch thick. Individual steaks may vary slightly in size — the listed package weight is what's guaranteed. Great as a centerpiece steak for a special dinner, sliced over a Caesar salad, or chopped into a steak sandwich the next day.

A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat a minute or two earlier than they would beef and letting it rest before cutting. Treat it gently and it will reward you.

A note on weight: The package size you select is your guaranteed minimum. Many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.
