Lean, clean, ready for anything

Our ground bison is the workhorse of our store. Significantly lower in fat than ground beef, higher in protein, and with a deeper, slightly sweet beefy flavor that comes from a lifetime of Colorado grass. Use it anywhere you'd use ground beef — tacos, chili, meatballs, lasagna, sloppy joes, weeknight burgers, breakfast hash, stuffed peppers, shepherd's pie. It just works.

Available in three sizes:

• 1 lb — a single 1-lb vacuum-sealed package
• 4 lb — four 1-lb packages (best for stocking up)
• 8 lb — eight 1-lb packages (best value per pound)

Each package is vacuum-sealed and frozen at exactly 1 lb. No weight surprises.

A note on cooking grass-fed bison: Grass-fed bison is much leaner than ground beef, so it cooks faster and dries out if you're not paying attention. A splash of olive oil or tallow in the pan helps. Cook over moderate heat rather than high heat, and always cook ground meat to at least medium for food safety.
