This is the box we'd hand a friend who's never cooked bison, because it covers the way people actually eat during the week and still leaves you something for a Friday night. The ground does the heavy lifting in chili, tacos, meatballs, and Sunday sauce. The patties are ready for the grill whenever the afternoon turns into that kind of afternoon. The strips are there for the night you want to sit down to a steak.

Enough meat to learn how bison behaves in your kitchen, which is really the point of a first box. Grass-fed bison cooks differently than beef, and four pounds of ground is plenty of room to get a feel for it before you commit to a freezer full.

A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat earlier than they would beef and letting it rest. Treat it gently and it will reward you.

A note on weight: All weights listed are the total package weight, not the weight of each individual steak. A package listed at 8 oz contains two steaks totaling 8 oz. The package size listed is your guaranteed minimum, and many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.
