A flat iron, a top sirloin, a ribeye, a filet mignon, and a New York strip. Every package holds two steaks, and the weight listed is for the package, not the individual steak. Each cut eats differently, and putting them side by side is the fastest way to find the one you want to keep in your freezer. The flat iron is beefy and quick. The sirloin is lean and honest, the everyday steak. The ribeye brings the richest flavor of the five. The filet is tender enough to cut with a fork. The strip sits in the middle with good flavor and a good chew.
Don't expect the heavy marbling of grain-finished beef. Our bison is 100% grass-fed and grass-finished, which means less fat and a cleaner, more honest flavor. What you taste comes from moisture and a lifetime on Colorado grass, not from intramuscular fat. Cook your way through the box over a few weeks and you'll have a favorite by the end of it.

A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat earlier than they would beef and letting it rest. Treat it gently and it will reward you.
A note on weight: All weights listed are the total package weight, not the weight of each individual steak. A package listed at 12 oz contains two steaks totaling 12 oz. The package size listed is your guaranteed minimum, and many packages run slightly heavier. Each cut is hand-trimmed by our USDA-inspected processor from individual animals, and natural variation is part of what makes this real ranch meat.
