Each package contains 2 top sirloin steaks, cut 1 inch thick. Individual steaks may vary slightly in size — the listed package weight is what's guaranteed. A note on cooking grass-fed bison: Grass-fed bison is significantly leaner than beef or grain-finished bison. It cooks faster and dries out more easily. Most people get the best results pulling it off the heat earlier than they would beef and letting it rest before cutting. Treat it gently and it will reward you.
